The dormancy period
In the heart of our Burgundy vineyards, a delicate and passionate ballet unfolds
After carefully harvesting the precious fruits of a year's labour, we let our vines enter a period of rest, an enchanted interlude called dormancy. Dressed in its splendid golden coat (from which the Côte d'Or department takes its name), the vine exudes a captivating grace before surrendering to the embrace of winter. Throughout the month of November, we spread the organic components needed to invigorate our soils. Then, until the month of February, like attentive craftsmen we meticulously prune, gently, preparing the vine for its awakening.

Once the pruning is completed, it is time to plough the soil in April. This operation will bury the organic components we laid out previously and will mark the beginning of bud break. We remain attentive to the weather conditions to protect our future harvest, drawing lessons from past uncertainties. Every action is imbued with respect for nature, as we understand the importance of balance between soil and plant.

Blossoming and delicate gestures
The beginning of summer is the time for delicate gestures that accompany the growth of our vines
Blossoming is a crucial stage when delicate flowers announce the future harvest. Each fertilized flower becomes a promising bunch of grapes. Tying-up and down holds up the vine shoots, providing gentle support to the clusters. Trimming regulates the growth by eliminating unnecessary young shoots. Each step is carried out with care, respecting the vine's natural rhythm. These precise gestures will be reflected in each bunch as they begin to ripen under the summer sun.

Maturation and harvest preparation
During the summer months of July and August, our interventions in the vineyards become more measured
Delicate green harvest and thinning out the leaves promote optimal grape ripening. We prevent diseases, if necessary, using plant-based preparations. The harvest date is determined through regular samplings. We closely monitor the health and maturation of the grapes. Our rigour and expertise aim to ensure an optimal harvest of grapes capturing the essence of our Climats. Each harvest celebrates the culmination of an intense growing year and prepares for the future of incomparable wines.
